Spicy Honey-Chili Beef Skewers with Peppers

When the grill’s going and we’re in the mood for something spicy, this is one of our absolute favorites.


These spicy honey-chili beef skewers are sweet, smoky, and just the right amount of spicy. We love using our local Las Vegas honey—it adds that deep caramelized flavor that brings everything together once it hits the flame.


The real magic happens when you plate it all up with fluffy basmati rice and a generous scoop of cold, tangy kimchi. That mix of warm and cool, spicy and sweet, rich and fermented—it just works.


We make this when we want something fun, flavorful, and a little different from the usual.



Ingredients:


For the skewers:


  • 1½ lbs beef (sirloin, ribeye, or flank steak work great), cut into 1-inch cubes

  • ⅓ cup honey (local and raw is best)

  • 2 tbsp chili garlic sauce or Sriracha

  • 1 tbsp rice vinegar

  • 1 tbsp olive oil

  • 1 tsp fresh grated ginger (optional but adds a great kick)

  • 1 large red onion, cut into chunks

  • 2 bell peppers, any color, chopped into bite-size pieces

  • Salt and black pepper to taste

  • Skewers (if using wood, soak them in water for 30 minutes first)


For serving:


  • Steamed basmati rice

  • A good-quality kimchi (spicy, crunchy, and chilled)


Instructions:


  1. Make the marinade. In a bowl, whisk together honey, chili garlic sauce, rice vinegar, olive oil, and ginger. Taste it—you’re looking for a bold balance of sweet and heat.

  2. Marinate the beef.Toss the beef cubes in the marinade, cover, and let it sit in the fridge for at least 2 hours. If you can do this overnight, even better.

  3. Assemble the skewers.Thread the beef, bell peppers, and onion onto your skewers, alternating pieces. Don’t pack them too tight—leave a little space between each for even cooking.

  4. Grill it up.Heat your grill to medium-high. Place the skewers on the grates and cook for about 8–10 minutes, turning every couple of minutes until you’ve got a nice char and the beef is cooked to your liking. Baste with any leftover marinade while grilling for extra flavor.

  5. Serve hot.Plate your skewers over warm basmati rice with a good scoop of chilled kimchi on the side. That combo of smoky-sweet beef, fragrant rice, and tangy crunch is a total win.

These skewers are great for summer grilling, but honestly, we make them year-round. The kimchi gives it a little kick and keeps the whole dish feeling fresh. We’ve even chopped the leftovers into lettuce wraps the next day—if there are any leftovers.
